Weekends should be filled with little highlights, and what better way to get started than a lovely, long breakfast. Here are three recipes that are easy to make, yet delicious enough that they feel like a great weekend treat. They're light and nutritious, all are vegan, some are gluten free (and the rest are easily adaptable to being so). Experiment around with flavours, tweaking to get your optimal taste: More turmeric in the granola, maybe, or an extra sprinkle of peanuts in the poha — take the time to settle down into the weekend and pamper yourself and your family.
1. Crunchy, low-sugar turmeric cardamom granola with nuts and seeds. Full of flavour, low on sugar and so easy to make, a tray of this amazing granola will last much beyind the weekend and makes a great weekday breakfast option as well.
2. Poha is a delicious, gluten-free dish made from steamed rice flakes, boiled potatoes, crunchy peanuts and fresh coriander. It's warm and filling, and a real crowd pleaser. This one is perfect for brunch as well, and can be eaten hot or at room temperature.
3. These crispy coconut rotis are from Sri Lanka. They have an amazing texture and delicate sweetness from the coconut flakes that are mixed into the dough. They're simply to make and fry up in minutes on a hot pan. Eat plain, lightly buttered or with your favourite coconut chutney.
